Alaine's Vegan "Victory Pig" Style Pizza
aka my Cheezy Onion, Black Olive & "Pepperoni" Pan Pizza
This recipe actually took me more time to write out than it did to make. It's really easy and so good even omnivores like it!
Tools Needed:
Rectangular heavy metal Jelly Roll Pan
Rolling Pin
Sautee pan
Cutting Board large enough to hold dough when fully rolled out
Sharp knife
Small cutting board
Grater
Ingredients:
1 Tbsp. Olive Oil (plus a little extra to brush the Pizza Pan with)
1 Medium Onion
1 8 oz. Veganrella Mozarella Style Cheese
1 10 oz. Follow Your Heart Monteray Jack Style Cheese
1 1/2 to 1 3/4 Large Fresh Tomatoes, thinly sliced
Dried Oregano
Sea Salt
1 15 oz. can black olives, sliced
1 4 oz. package Smart Deli Pepperoni Slices (you probably won't need whole pkg)
Cornmeal or Corn Flour
1 lb. Fresh Pre-Made Pizza Dough -
Pizza Dough Note: I used one I bought at Wegman's in the frozen bread section It was labeled Pepe's Bakery & must be kept refridgerated or frozen till ready to use - Whatever brand you use choose to use make sure the ingredients are vegan...You can also phone a local pizza place and ask them if thy would sell you their pre-made pizza dough - which you can also freeze
if you want to keep some on hand...just inquire about ingredients to be sure it's vegan)
Instructions:
About 1 hour ahead of time Preheat Oven to 400 Degrees Farenheit.
Put 1 Tbsp. Olive Oil in a sautee pan and turn pan on low to med-low to allow oil to heat.
Chop Onion. When all onion is chopped, the oil in your sautee pan should be ready.
Turn sautee pan heat up to high. Add chopped onion. Stir about a bit, then cover and reduce heat to low.
Drain & slice Black Olives. Set aside.
Thinly Slice Tomatoes. Set aside.
Grate the 2 packages of vegan cheese using larger holed side of grater. Set aside.
Using cornmeal, lightly "flour" the large cuting board, your hands and rollling pin.
Roll pizza dough to a rectangle slightly llarger than the pan you are using.
You may need to work the dough over your fists to stretch it. Pizza dough like to stick to surfaces so watch for that and apply dustings of cornmeal as needed.
When dough is corect size, brush rectangular pan, ubcluding sides with olive oil. I used about 1/2 a tablespoon olive oil.
Place pan upside down over dough on cutting board and holding board & pan together flip them over so dough drops down onto pan.
Take a fork and every 1 1/2 inch or so pierce dough. Brush dough lightly with olive oil and put in oven for 10 minutes.
Take slightly baked crust out and make one layer of tomatoes (space tomaoes fairly close....gaps are ok)
Sprinkle tomatoe layer lightly with forst sea salt and then fried oregano.
Distributed slightly carmelized onions over tomato layer.
Top with cheeze mixture, then olives and "pepperoni".
Return to oven and bake till crust is golden brown and cheeze is melted.
About 10 to 25 more minutes. It will depend how good your oven is.
Allow pizza to set for about 5 minutes after removing from oven. It will cut better. Be careful as baked tomatoes are really hot and you may burn your mouth.
This recipe tastes so close to our local "Victory Pig" Pizza place's Pizza it is scarey! I used to go there when I was a child, pre-vegan days and it was the best pizza I ever ate. It almost had the shape of Sicilian pizza, but the dough was light, and golden crispy "fried" almost like a deep dish pizza.
NOTES:
Our oven is really old and due to be replaced. It bakes extremely slow, so my total time of 35 minutes (and still the crust in the middle wasn't as crisp as I'd have liked) may be longer
than yours.
